Winemaker's dinner with St. Clement winemaker Danielle Cyrot (Part 1) |
Danielle Cyrot, Winemaker, St. Clement VineyardsWine had always been a part of Danielle Cyrot's life, but she never imagined it would be her career. Having grown up with a French father and yearly trips to Paris, Danielle was aware of the vinous history of her family. Her great-grandfather was the last in a long line of ancestors who owned the Cyrot vineyard in Burgundy's prestigious Côte de Beaune. After losing his eldest son in World War I, he donated the land to the Hospices de Beaune. There is still a Cyrot cuvée sold at the charity auction each year. Danielle had no intention of revitalizing her family's history of winemaking when she enrolled at the University of California at Davis, but everything changed when she took an introductory winemaking class taught by popular professor Carole Meredith. Danielle was hooked immediately, and graduated in 1998 with a degree in Enology and Viticulture. While at Davis, Danielle worked harvests at Schramsberg and Artesa in Napa Valley. After graduation, she was determined to experience winemaking abroad and traveled to Alsace and South Australia to hone her skills. Danielle returned to Napa in 1999 and joined the team at Stags' Leap Winery as an enologist. In 2003, she was promoted to assistant winemaker there. In 2005, Danielle's hard work paid off. After six years at Stags' Leap, Danielle was offered the position of winemaker at St. Clement. Drawing on her travels to France and Australia, as well as her experience in the Napa Valley, Danielle appreciates the philosophy that wine is created in the vineyard, but she also monitors her cellar carefully. Her wines are elegantly structured with refined tannins and balanced components. Always true to herself, Danielle's wines are an expression of her and what she likes in a glass of wine. ![]()
