The Oliver family, owners of Star Vineyard, has collaborated with viticulturist David Abreu toensure that their fruit and their vineyard is absolute perfection; and it is. Consistent weather and rocky, well-drained soils make this a sweet spot for Rutherford Cabernet Sauvignon. The Cabernet that we purchase for St. Clement is located on the crown of the vineyard. This vineyard is the backbone of Oroppas each year, and produces wines with wonderfully silky tannins and vivid fruit. The 2006 growing season began with cool springtime temperatures and a slightly later bud break. Warm summer months kept harvest on track by gradually advancing fruit maturity and ripeness in the vineyard. Harvest progressed perfectly, and aroma, tannin, and flavor profile for this vintage is phenomenal. Acclaim: Wine Advocate From the famed Rutherford dust of northern Napa…dark ruby/purple color is followed by a sweet bouquet of cedar, black cherries, black currants, and a touch of spicy oak, medium to full-bodied flavors, ripe tannins, and a round, generous finish. This outstanding, well-made Cabernet Sauvignon should evolve nicely for 15+ years.

This wine opens with lush aromas of blueberry, milk chocolate, cinnamon, and vanilla. The palate follows with with flavors of raspberry jam, black currant and cocoa powder wrapped around smooth, velvety tannins. The wine is aged in French oak (95 percent new) for nineteen months. A small amount of Merlot and Cabernet Franc from the Star Vineyard provides additional structure and aroma.
